First make a swatch to get your gauge (stitches and rows per inch).
A: Then multiply your stitches by
10" (12", 13"

14",15") to get how many stitches you will need to cast on.
B: Also, multiply the rows to each inch for the height
of Hat needed 4" (

This is for a rolled brim hat.
Cast on your favorite favorite way, I like a closed cast on (like the e-wrap or crochet cast on) A sts.
Then work B rows you need for the height.
Transfer EON to the adjoining needle, work 2 or 3 rows.
Cut yarn, leaving about 2 times the length of the needles in work, thread onto tapestry needle and thread through all sts.
Sew up the side using a Baseball Stitch. catching only the outside edge of each loop.
I found that working with baby yarn about 3 ply I would use 40 sts, and 35 rows for a preemie. Add more sts and rows to make bigger.
The one good thing is that it will always fit some baby.
Variations: For boys work the first inch in latch tool 1X1 rib, (making sure that the end needles will not be latched up). For girls work up 6 rows even, then transfer every other st to the adjoining needle. Work up 6 more rows, hang the 1 st row to the needles to for a picot edge.
Hats for babies 6 months to adult
Now for another way to make these hats, you can cast on with the weaving cast on in this video.
You will knit up as above but now the cast on will be the top and you will pull the yarn tail to close it up. The top of the hat will be more full but maybe that is what your looking for.

I did a Back Stitch Bind Off on this hat to make the bottom edge stretchy.
This is what the cast on edge will look like when off the machine.
And final the finished hat on my Annie model.
